Ingredients for 2 servings
- 1 cup split yellow peas
- 2 cups water
- 1 1/2 cups ground beef 80% lean
- 1 Tablespoon rice
- 1/4 Teaspoon powdered saffron
- 1 Egg
- 1 Medium potato peeled
- 1 Tablespoon each dried summer savory and chive. Twice if you have fresh herbs
Salt and pepper to taste.
Ingredients for sauce
- 1 cup thinly sliced onion
- 1 Tablespoon tomato paste
- 2 cups water
- 1 Tablespoon oil
Ingredients for the center of the koofteh
Hand full of walnut, almond, barberry, 1 cooked peeled egg ( or any dried fruit you have in hand ), and fried onion. Wash the nuts and mix together put aside
How to cook
Wash the rice and cook with 1/2 cup of water and saffron till the water is all absorbed.
Cook the split peas and potato in two cups of water till soft.
Put all the koofteh ingredients in a food processor or mix by hand till it becomes a bit sticky and sticks to your hand.
In a medium deep pan fry the onion with 1Tablespoon oil till golden ( take and mix some of this fried onion with the nut mixture). Add the tomato paste to the rest of the fried onion, keep stirring till it is all smooth. Pour 2 cups of water and simmer on low heat.
Wet a small bowl, put half of the meat mixture in, and with your wet hand make a well in the middle of it. Put the nut mixture, hard-boiled egg, and fried onion in the well and cover with the rest of the meat mixture. Make a very smooth ball, No cracks !!!!!!
Very carefully ( like putting a baby in bed )slide the meatball in the simmering onion & tomato mixture. Oooookey Braaavvvoooo,
Now, Let the koofteh simmer uncovered for 20 minutes. Keep basting the koofteh with the sauce till the color changes and looks a little pale. Add boiling water a little at-a-time if needed.
At this time koofteh should look firm, cover, and simmer for another 30 minutes.
Don’t you ever cover the koofteh in the first 20 minutes? It will be scared and will BURST into pieces.
